I'm always amazed at the time it takes (or more appropriately, the time it DOESN'T take) for a zucchini to go from a lovely blossom to a baseball bat. We pick zucchini a couple times a week to prevent growing a field of weapons. Good thing is, zucchini is an incredibly versatile vegetable so we're able to put even the overgrown zucchini to good use in dill relish, zucchini bread, pickles, veggie noodles. And when we run out of fab recipes for these green giants, Simply Happy Hens ladybirds go bonkers over a good overgrown zucchini!
